Gnocchi With Creamy Sage Sauce

A rich sauce covers gnocchi for a delicious and satisfying meal.

For the Sage Sauce:
3 Tbsp. Earth Balance margarine
1 tsp. chopped fresh sage
3/4 tsp. sea salt
1/4 tsp. black pepper

For the Gnocchi:
1 lb. white potatoes, peeled and quartered
Sea salt, to taste
1 1/4 cups white flour
Sage leaves to garnish

For the Sage Sauce:
• In a small saucepan, melt the Earth Balance over medium heat. Continue to cook, stirring constantly, until golden brown.
• Remove from the heat and stir in the sage, the sea salt, and the black pepper. Set aside.

For the Gnocchi:
Cook the potatoes in boiling, salted water for 15 to 20 minutes, or until tender.
• Stir in a generous amount of the sea salt, drain, and mash until smooth. Transfer to a bowl.
• Sprinkle flour into the bowl with one hand while kneading into the potatoes with the other hand.
• Continue until all the flour is worked in and the dough is smooth. This will take a few minutes (the dough will be sticky at first). Divide into 3 pieces.
• Form each piece into a 1- to 2-inch-thick roll. Cut into 1-inch-long pieces and roll against a fork. Repeat with the remaining dough.
• Drop each gnocchi into heavily salted, boiling water. Cook for 2 to 3 minutes, or until rising to the surface.
• Remove from the water, drain well, and transfer to a warm plate.
• Toss with the Sage Sauce and garnish with the sage leaves.

Makes 6 to 8 servings

I have been reading about using sage plants for healing and cleansing. I was wondering can you use any sage plant? Also what sage plants can I find in arizonas sonoran desert? If you could give me the name or a link to a picture I would appreciate it. When I take walks in the desert I want to keep my eye out for them. I know I can buy them, but I would rather just find one.

Go to the Internet with "sage as medicine." Good stuff there.

I want to send sage seeds for private cultivation from New Zealand to Tonga. A friend of mine lives there and wants to grow some in her garden.
I am assuming now that Tonga and NZ are in the same biodiversity region of the world, and that sage is not an unwelcome plant in Tonga (if it is, I would really like to know, because I wouldn't send it then).
Does anyone know where to find out about these things?

I assume, that there is a Tongese foreign embassy in New Zeeland. Maybe you can call them and ask.
If anyone, they should be able to give you the information you need.

I only need it for tax calculations, ins and outs, invoices and other simple tasks. I will be a sole trader running a small ironing service from home. Anyone recommend the cheapest place to buy Sage too please?All help is appreciated thanks!

quickbooks is the best to use for a home or small bus. I use it evreyday it is a snap to use and not alot of stuff to go over before you can use it.

I am looking to repaint my master bedroom and bath and need some help with paint colors. My carpet is mauve, my new comforter is sage green. What color do I paint the walls? That will be beautiful? Also what color window tratments should I get?

Consider:
Walls - ivory, white, paler mauve, or paler green than bedding
Windows: should be same color as bedding, walls, or carpet; or print of several of the colors [ could probably find a flowered one pretty easily ]
Buy paint AFTER you pick out window treatments - you'll have a better picture of how wall color will look.

I have two Russian Sage bushes in my yard and my neighbor would like some of it in her's. Will Russian Sage branches create roots if soaked in water and root starter or does it need to be dug up from the roots? When is the best time to do it? Advice? Websites?

It's actually pretty hard to divide Russian Sage successfully because of the woody base. It's better to take cuttings from shoots that emerge from the base of the plants in spring or early summer, or to just dig up the small offshoots that appear on the outside of established clumps. I like the idea of layering because you just place a rock on the stem touching the ground & it grows roots without much fuss.

It makes sense that the bigger the root system, the better the survival rate. However, if the root system happens to be small, the plants should do OK if they have plenty of soil attached to the roots. Be sure to "water regularly during the first growing season to establish a deep, extensive root system. After the plants are established they can tolerate drought very well." Make sure they have good drainage or their roots will rot. "Russian sage... is more like an annual or biennial. Plants usually die within two years, but might reappear from seedlings or root suckers."
